Vinification |
Manual harvest. Fermenting and post-fermentative maceration. During this last process, daily pump-overs are carried to keep the contact of the skins and with the wine, extracting as much tannins and aromas as possible. This process lasts, approximately 15 days with controlled temperatures around 28 ºC. Natural malolactic fermentation with subtle oak treatment to preserve the varietal typicity. |

TASTING NOTES :
Deep red with purple hues.
Red fruit such as plum, blackberry or cherry. Subtle vanilla notes coming from the oak.
Soft sweet tannins in the first impression, well-balanced with a long finish.
PAIRING :
Grilled meat (beef, lamb), hard grain and blue cheeses, traditional pasta with heavy sauces.
