Grapes are harvested by hand in small 25 Kg boxes. All the grapes go through a sorting table and are transported into the press by a conveyor belt. The grapes are then pressed as whole bunch. 50% of the juice is fermented in stainless steel vats, while the other 50% is fermented in new oak casks at a temperature between 18° and 23°C. The wine is then aged on fine lees for 7 to 8 months. |
