Vinification | 100% hand-picked in 18kg boxes and carried to the winery immediately after cutting.
Carefully selected before processing. Fermented in 15.000 and 25.000 liter stainless steel tanks for 7-10 days at 25-28ºC controlled temperature to dryness with selected and native yeasts (80/20). Extended maceration for additional 3 – 5 days. 100% malolactic fermentation. 225 liter new French oak barrels for 14 to 16 months. |
TASTING NOTES :
It combines juicy and flavorsome Cabernet Sauvignon with Petit Verdot, Carignan and Carménère and is aged 12 months in oak barrels. Deep purplish-red in color, this wine offers intense aromas of cherries and strawberries which blend with delicate notes of spices, coffee and tobacco. The palate is fresh and elegant with delicate tannins and a long-lasting finish.
PAIRING :
It pairs really well with Southern French or Mediterranean food, especially Toulouse sausages and red meat such as beef or lamb, as well as ratatouille or roasted vegetables. Great also with dishes with a hint of fruit, such as lamb tagine, baked eggplant or dishes with mushrooms.
