Type of Soil | Mixture of silt and clay with low nutrients that favor the quality ripeness of the grapes. |
Vinification | Hand-picked in 18 kg boxes and carried to the winery immediately after cutting. Carefully selected before processing. Vinification: Destemmed and chilled to 8 ºC. Pneumatic pressing and 24-36 hours static sedimentation at 8ºC prior to fermentation. Fermented in stainless steel tanks between 14 and 17°C for 25 days. Stored in temperature controlled stainless steel tanks through bottling. |

TASTING NOTES
Aromas of green apples, pineapples and peaches combine nicely with notes of fresh herbs and lemon blossoms. The palate is fresh and tasty, with a round and fruity finish.
PAIRING
This fresh and fruity wine makes the perfect accompaniment to shellfish or light fish dishes. Because of its herby characteristics, it can match well with light dishes with green herbs, also salads or softer more sour cheeses such as goat’s cheese.
