Type of Soil | Soil types vary from Hutton, Clovelly, Sandy fernwood, and Kroonstad, but Malmesbury Shale dominates, with small patches of granite and Table Mountain sandstone. |
Winemaking | The grapes are hand-picked in the early hours of the morning, destalked and crushed. The juice and grapes are cooled and pumped into stainless steel tanks, inoculated with yeasts and fermented at 24 – 26° C. Finally the grapes are pressed, the juice is transferred back to stainless tanks for malolactic fermentation. This wine is then further matured in tank for up to 12 months to soften and integrate the tannins before bottling. |

TASTING NOTES
A medium-intensity color wine with ruby red centre and a light rim. Clear and bright. A complex nose with aromas of eucalyptus, mulberries and blackcurrants, spices and a wonderful earthiness. The nose follows through onto the palate with rich blackcurrant tones, as well as spices and forest floor flavours. This is an intense, complex wine, but well-balanced with medium to firm tannins and excellent wood integration. A classic, full and rich wine with a creamy palate and long aftertaste.
