Vinification |
Hand-picked grapes from 19 to 32 year old vineyards grown in the microclimate of the Siepi estate. Fermentation is carried at 26°C to 28°C and maceration lasts between 14 to 18 days. An 18 months ageing period takes place in small French oak barrels (225 lt, 70% new). |
TASTING NOTES
Monumentally built, with crispy notes of elder, plums, red berries, sandalwood, and tobacco. On the palate the texture is juicy, with a fine layer of well-integrated tannins and a very long, bright finish.
The unique terroir of the Siepi estate is perfect for Merlot as the ideal grape to complement Sangiovese, in a very particular microclimate that gives birth to a wine which is perfectly balanced between elegance, power and complexity.
PAIRING
Flavorful and textured dishes like braised beef and veal. It also goes well with game and blue cheeses.
