Making Process | Marc’s Eau-de-Vie is obtained by distilling the solid parts of the destemmed and previously fermented grapes. Distillation, carried out in two stages over a wood fire in old copper stills, is carried out during the winter following the harvest. It thus makes it possible to obtain finely elaborated alcohols and to filter negative substances to obtain better quality cores. Their Eaux-de-Vie are about 60% vol., they are then stored in stainless steel tanks for several years before being assembled and ground to 48% vol. Before bottling, a final filtration is carried out. |
TASTING NOTES :
The crystalline colour offers a clear disc and thick tears.
The expressive, fine nose is marked on the marc with nuances on the spices.
The palate is rich, full, with hints of liquorice and slightly musky pink.
A long finish brings the aromatic complexity and finesse of the Gewurztraminer grape variety to this traditional Eau-de-Vie.

The Marc de Gewurztraminer can be enjoyed as a digestive but can also be served with a fruit sorbet. Serve struck to appreciate all the subtlety of its refined bouquet.
