Vinification | The grapes were picked in the cool of the morning, before being de-stemmed into open top fermenter’s. They use the traditional Burgundian techniques of small batch fermentation and hand plunging. Some batches were given extended maceration on the skins post-fermentation. After pressing, the resulting wines were matured in predominately older French oak barriques. |

TASTING NOTES
The bright cherry and raspberry aromas scream “Pinot Noir”. The palate is gentle and supple with surprising power and depth, the wine has a lovely length, soft chalky tannins and gentle acidity. The aromas of fragrant vanilla and mocha are derived from maturation in a mixture of some new, but mainly older French oak barriques.

Vietnamese roasted duck breast with sauce, grilled or roasted red meat.
