Vinification | Picking when the flavor is optimal is key for this variety and several passes were made through the blocks to ensure each parcel was perfect. The grapes were gently pressed and the free run juice went to tank and the pressings to barrel.
Post fermentation the wines were blended to give harmony and balance. |

TASTING NOTES
This wine has a wonderfully varietal nose with a complex array of aromas. The classic lychee and rose petal notes are joined by lemon, mango, cardamom and ginger producing an intoxicating mixture. The palate has lovely fruit concentration and length yet has a lightness and poise. We have deliberately left a touch of sweetness to balance the wines acidity and weight.
