Type of Soil | Soil types vary from Hutton, Clovelly, Sandy fernwood, and Kroonstad, but Malmesbury Shale dominates, with small patches of granite and Table Mountain sandstone. |
Winemaking | The grapes were harvested at optimal phenolic ripeness. The skins, pips and stems were removed and the juice was then fermented at controlled temperatures of between 13°C to 14°C with aromatic yeast strains. Following fermentation the wine was stabilised, filtered and bottled, in order to preserve the freshness. |

TASTING NOTES
Bright colour, light yellow-green. On the nose, ripe passion fruit, guava and pineapple flavours, followed by refreshing citrus notes. Well-balanced, full fruity palate and crisp acidity. Fresh minerality on the finish.
PAIRING
Chicken dishes, salads and light lunches. Also brilliant with mild, soft cheeses.
