Vinification |
Pre-soak with cold water for 7 days. Alcoholic fermentation for 10 days at a controlled temperature of 25ºC in stainless steel tanks. 8 months in new 400L French oak barrels.

Tasting Notes
Gratavinum Silvestris is a natural wine, like it was elaborately produced thousands of years ago, fermenting only grape juice with the wildest grape yeasts, and without any additives. Sourced from organic vineyards that have not been invaded by any chemicals, the ultimate expression of the earth’s nature and a toxic virgin. Deep garnet color with a hint of purple, intense at the nose, mainly ripe red and black fruit flavors with a light tan background. Goes into the mouth with great breadth, combining ripe fruit with balanced acidity and volume. Long-lasting and persistent, it can be distinguished for its great intensity and purity in all regions.

Roast pork with onion fat, grilled pork belly, grilled chicken and duck.
