 Vinification The wine making is relatively straight forward. The free run juice is fermented in stainless tanks with a specially selected yeast. The pressings were fermented wild in barrel before being returned to the wine prior to the final blending.

This wine has a wonderfully varietal nose with a complex array of aromas. The classic lychee and rose petal notes are joined by lemon, mango, cardamom and ginger producing an intoxicating mixture. The palate has lovely fruit concentration and length yet has a lightness and poise. We have deliberately left a touch of sweetness to balance the wines acidity and weight.
