Vinification

Harvest: by hand in very small box (avoid to damage the grape)
Fermentation: 60% in new oak barrels at the temperature which is from 18 to 23 celsius
Aging : 20% in 300 and 500L barrels, 80% in vats from 7 to 9 months.

Type Fruity and floral. Soft and round with good minerality

Food & Wine Pairing Asian foods : Vietnamese Salads, Spring rolls, Fish (Pan Fried, Baked, in Cream sauce), Sashimi

Appearance: Bright yellow straw with light green reflections.
Nose: Complex, exhaling fruity (Citrus) and floral.
Palate: Soft and Round with good minerality and a lingering finish.
