Vinification

• Manual harvest
• The must is run into French oak barrels (aged of 6 years in average) for 30 to 50% of the harvest.The remainder is vinified in small stainless steel vats.
• Maturing: 10 to 15 months, of which 4 to 6 months on fine lees in French oak barrels for 40 to 50% of the harvest. The end of maturation occurs in small stainless steel vats.

Fish, seafood and shellfish, grilled or in a cream sauce, poultry and white meat, grilled or in a cream sauce

Good green-tinged color. Aromas of lime, white flowers and mint. Then sweeter and creamier than the Montmains, conveying more of a sense of structure and size but less elegant in style. Rich, layered, broad and classically dry. Less suave today than the Montmains but this is quite smooth.
